Avocado BLT Grilled Cheese (Printer-friendly)

A decadent twist featuring crispy bacon, fresh lettuce, tomato, creamy avocado, and gooey melted cheese on buttery bread.

# What You Need:

→ Bread & Dairy

01 - 4 slices sourdough or country white bread
02 - 2 tablespoons unsalted butter, softened
03 - 4 slices cheddar or Monterey Jack cheese

→ Meats

04 - 4 slices thick-cut bacon

→ Vegetables

05 - 1 ripe avocado, sliced
06 - 1 medium tomato, sliced
07 - 2 leaves romaine or butter lettuce

→ Condiments & Seasoning

08 - Salt and freshly ground black pepper to taste

# Steps:

01 - Cook bacon in a skillet over medium heat until crispy. Transfer to paper towels to drain.
02 - Lightly butter one side of each bread slice.
03 - Place two bread slices, buttered side down, on a clean work surface. Layer each with cheese, bacon, lettuce, tomato, and avocado. Season avocado and tomato with salt and pepper. Top with remaining cheese slices and remaining bread, buttered side up.
04 - Heat a large nonstick skillet or griddle over medium-low heat. Place sandwiches in the skillet and cook until golden brown and cheese is melted, about 3-4 minutes per side, pressing gently with a spatula.
05 - Remove from skillet and let cool for 1-2 minutes. Slice in half and serve immediately.

# Top Tips:

01 -
  • It takes everything you love about a BLT and makes it warm, melty, and even more indulgent.
  • The creamy avocado balances the salty bacon in a way that feels almost unfair.
  • You can make it in twenty minutes flat, which means it works for lunch, dinner, or that weird in-between time when youre just really hungry.
  • The buttery, golden crust on sourdough is the kind of texture that makes you close your eyes when you bite into it.
02 -
  • If your heat is too high, the bread will burn before the cheese melts, so keep it on medium-low and be patient.
  • Pressing gently with the spatula helps the sandwich hold together and encourages even browning without squishing out all the fillings.
  • Letting the sandwich rest for a minute before cutting makes a huge difference in how neat your halves look.
03 -
  • Toast your bread in the skillet first without any toppings to test your heat level, that way you know exactly how long it takes to get golden.
  • Use a cast iron skillet if you have one, it holds heat evenly and gives you the most consistent browning.
  • If your avocado is underripe, let it sit on the counter for a day or two, a hard avocado will ruin the creamy contrast this sandwich depends on.
