# Steps:
- Set the oven to 425°F and position a rack in the center; line a baking sheet with parchment paper.
- Toss the drained, dried chickpeas with 2 tablespoons olive oil, smoked paprika, ground cumin, garlic powder, 1/2 teaspoon salt and 1/4 teaspoon black pepper until evenly coated.
- Spread chickpeas in a single layer on the prepared baking sheet and roast for 25–30 minutes, shaking the pan or stirring every 10 minutes, until golden and crisp.
- While chickpeas roast, heat a grill pan over medium-high heat and brush or toss the zucchini, bell peppers and red onion with 2 tablespoons olive oil; season with salt and pepper.
- Place vegetables on the hot grill pan and cook 6–8 minutes, turning occasionally, until tender with charred edges; remove and keep warm.
- If using homemade hummus, blend canned chickpeas, tahini, garlic, lemon juice, 1–2 tablespoons olive oil and salt in a food processor until smooth; adjust seasoning to taste.
- Spoon a generous portion of hummus into each serving bowl, arrange grilled vegetables on top, and finish with a portion of crispy roasted chickpeas.
- Scatter chopped parsley and toasted sesame seeds over the bowls and serve with lemon wedges; optionally drizzle with tahini or a squeeze of lemon before eating.
