Strawberry Yogurt Clusters Delight (Printer-friendly)

Juicy strawberries and creamy yogurt coated in smooth chocolate for a cool, satisfying snack.

# What You Need:

→ Fruit & Yogurt

01 - 1½ cups fresh strawberries, hulled and chopped
02 - 1 cup Greek yogurt (plain or vanilla; dairy-free alternative optional)
03 - 1 to 2 tablespoons honey or maple syrup (optional)
04 - ½ teaspoon pure vanilla extract

→ Chocolate Coating

05 - 7 ounces dark or milk chocolate, chopped or chips
06 - 1 tablespoon coconut oil (optional)

# Steps:

01 - In a medium bowl, combine Greek yogurt, honey or maple syrup if using, and vanilla extract. Stir until smooth.
02 - Gently fold in chopped strawberries until evenly coated.
03 - Line a baking sheet with parchment paper.
04 - Scoop heaping tablespoons of the strawberry-yogurt mixture onto the parchment, spacing clusters apart. Yield should be approximately sixteen clusters.
05 - Place clusters in the freezer for one to two hours or until firm and solid.
06 - Melt chocolate with coconut oil if used, in a microwave-safe bowl using 20-second increments, stirring between each until smooth.
07 - Dip each frozen cluster into melted chocolate with a fork, coating thoroughly. Allow excess chocolate to drip off, then return clusters to the parchment-lined sheet.
08 - Freeze coated clusters for at least thirty minutes until chocolate sets.
09 - Enjoy directly from the freezer. Store leftovers in an airtight container in the freezer for up to two weeks.

# Top Tips:

01 -
  • They taste like dessert but you can actually feel good about eating them.
  • Fifteen minutes of prep means you can have frozen treats ready before dinner.
  • The contrast between creamy yogurt and crispy chocolate is oddly addictive.
02 -
  • If your chocolate seems too thick after melting, resist the urge to add liquid; just pop it back in the microwave for five more seconds instead.
  • Strawberries release water as they thaw, so don't let the clusters sit at room temperature too long or the yogurt base will weep and separate.
03 -
  • Room temperature strawberries will warm up your yogurt mixture, so chop them just before folding and consider chilling the yogurt first if your kitchen is warm.
  • The coconut oil isn't just for looks; it genuinely changes how the chocolate behaves and makes your finished clusters less brittle and more forgiving to bite.
